
So it’s a rainy Memorial Day weekend, but I’m still super happy ’cause I don’t have to go to work tomorrow, my birthday (the best day of the year) is fast approaching (hint, hint), AND our New York trip is coming up as well. So, I’m going to celebrate like it’s a beautiful, sunny day! Keith is grilling our burgers, and I just made the most fantastic mojitos ever. I adapted the recipe from one I saw in Allure magazine. Here goes…
Watermelon Mojito (makes two)
- 8 1-inch watermelon cubes
- 5 mint springs
- 2 tbs. fresh lime juice
- 2 tbs. simple syrup (we make our own by mixing equal parts sugar and water, bringing to a boil and cooling)
- 2/3 cup white rum
- soda water to taste (we used Whole Foods key lime soda)
Crush the watermelon and springs of mint together in a shaker, then add ice, lime juice, simple syrup, and run, and shake vigorously. Strain into the glass and top with soda water. Garnish with a mint leaf (optional. we’re not that fancy.)
